Taramosalata (Fish roe salad - meze)

Photo taken from Athinorama Umami Taramosalata There are also the Greek classics, think something like a dip but instead of using nachos or vegetables to eat them we use bread. Taramosalata is one of those dishes.   It is roe fish blended into a creamy pink dip of pureed potatoes with parsley, lemon juice, and finely chopped onion (optional).   In meze, this is one of the first dishes that it is served.   In taverns, they always bring it along with salad, tzatziki, and tahini.   We will talk about the last two later.   Well, let’s see our recipe…   Ingredients 2 kg tarama (fish roe). 1 large potato or two small ones 450gr of Greek bread 1 tsp of shredded and dried onion 1 cup olive oil The juice of one lemon (medium size) Tarama is the hardest ingredient to find, so it is a good idea to look at groceries that import Mediterranean food. It is usually sold in larger jars, but you can store the remainder in the freezer for months. Peel the potatoes and cut t

Handbag Cake

This is the first 3D cake I ever made.  I was so proud of myself that I did not even bother taking photos of the procedure. Actually the photos you see here were taken from my mobile when I took the handbag to work. My colleagues were so amazed with the result that they started taking photos of the handbag with their mobiles, so I decided I should do the same.

The handle is awful :-(
Back then I thought it was fine… :-)

Below you can find the recipe I used to make the handbag. Keep in mind that this was a round chocolate cake that it was decorated with fondant icing.

-----------------------------------------------------------------------
Ingredients for the Chocolate Sponge Cake
4 large eggs
1 tsp unsweetened vanilla extract

Sponge Preparation Method
1) Preheat the oven to 170ºC (338ºF).
2) Grease a round pan (24cm).
3) Sift together the flour, cocoa powder and baking powder.
4) With an electric mixer beat together the eggs and sugar for 8’ minutes, until light and fluffy; then add vanilla extract and the sifted flour (one tablespoon at a time). Do not over mix.
5) Bake for forty minutes. Allow 5’ minutes before you remove the cake from the pan. Set cake aside and allow to cool completely before you decorate it.

Filling Ingredients
1/2 jar of strawberry jam (125gr)
(1/4 glass of hot water to dissolve the jam if needed)
1/2lt of double fresh cream
35gr unsweetened cocoa powder
25gr powder sugar (or more, it depends on how sweet you want your filling to be)

Filling Preparation Method
1) Sift powder sugar and cocoa powder.
2) With an electric mixer beat fresh cream, powder sugar and cocoa powder until the mixture becomes a cream. Do not over mix because if you do, you will have a cocoa butter and not a cream.

Handbag Assemblage
1) Use your imagination and create anything that you might like!!! A good tip would be to take one of your handbags and copy the design.

  17. That is so cute. That stitching looks so real. Hey who cares if the handle is not perfect - who says that machine made things have more value than hand made ones? I've been wanting to make one of these but never find the time - I've got instructions for a similar looking bag from the fondant class I attended earlier this year ...

  20. Hello everybody! Thanks a lot for your nice comments. The handle was made with fondant and tilos powder but unfortunately it was a bit heavy so I don't think that this was the best job I could do...
