Taramosalata (Fish roe salad - meze)

Photo taken from Athinorama Umami Taramosalata There are also the Greek classics, think something like a dip but instead of using nachos or vegetables to eat them we use bread. Taramosalata is one of those dishes.   It is roe fish blended into a creamy pink dip of pureed potatoes with parsley, lemon juice, and finely chopped onion (optional).   In meze, this is one of the first dishes that it is served.   In taverns, they always bring it along with salad, tzatziki, and tahini.   We will talk about the last two later.   Well, let’s see our recipe…   Ingredients 2 kg tarama (fish roe). 1 large potato or two small ones 450gr of Greek bread 1 tsp of shredded and dried onion 1 cup olive oil The juice of one lemon (medium size) Tarama is the hardest ingredient to find, so it is a good idea to look at groceries that import Mediterranean food. It is usually sold in larger jars, but you can store the remainder in the freezer for months. Peel the potatoes and cut t

Ariel Birthday Cake (Mermaid Cake)

This is the 2nd birthday cake I made for Lien.

Unfortunately I did not have much time to prepare the fondant myself so I used a ready made one. Disaster...

As you can see, the blue fondant is full of cracks plus it did not have the strength to stay on the cake in one piece. Just take a look on the right side of the cake…

Any way, Lien and my kids were thrilled with the overall result so I was happy too.

My kids and Lien helped me as well, so they were busy and happy!

I had to put the cake in the fridge the soonest possible :-)

  1. What a stunning, beautiful cake! I love the colors--they go very nicely together. If my little cousin saw this, she'd go completely nuts and demand I make her one :)

  12. Great Cake. I hate using fondant but find the wilton stuff to be easier for me than any marshmallow ones I've made, I am however very new to baking and cooking so I wouldn't take what I say into account :) Great job I don't think I would've even noticed the "mistakes" if you hadn't pointed them out :D
