Taramosalata (Fish roe salad - meze)

Taramosalata is one of those dishes.   It is roe fish blended into a creamy pink dip of pureed potatoes with parsley, lemon juice, and finely chopped onion (optional).   In meze, this is one of the first dishes that it is served.   In taverns, they always bring it along with salad, tzatziki, and tahini.   We will talk about the last two later.   Well, let’s see our recipe…   Ingredients 2 kg tarama (fish roe). 1 large potato or two small ones 450gr of Greek bread 1 tsp of shredded and dried onion 1 cup olive oil The juice of one lemon (medium size) Tarama is the hardest ingredient to find, so it is a good idea to look at groceries that import Mediterranean food. Date and Almond, Square Cake


It’s been ages since I last posted a cake recipe. Yesterday I had a million of things to do but I was feeling I had to do something for you as well. 
I decided to create a date/almond cake that would be easy to prepare, and perfect with a cup of tea!

It took me approximately 5’ minutes to gather all ingredients and 10’ minutes to prepare the cake. Very easy, isn't it?

Date and Almond, Square Cake
12 Servings

Ingredients
1/3 cup peanut oil
90gr unsalted butter
¾ cup cane sugar
1 tsp vanilla essence
2 small eggs
1½ cup all purpose flour, sifted
1 tsp baking powder
¼ tsp baking soda
1/2 tsp cinnamon
¼ cup fresh milk (2% fat)
150gr dates (19-20 dates) pitted and chopped into small pieces
½ cup (60gr) almonds, chopped

Method
1. Preheat the oven at 170ºC.
2. Melt the butter, oil, sugar and vanilla in a medium sized saucepan.
3. Remove from heat and let it cool.
4. Add eggs and mix in well. Stir in flour, baking powder, cinnamon and baking soda. Add milk and mix lightly with a fork or a small spatula.
5. Add dates and almonds. Mix lightly.
6. Bake in a square pan (20cm x 20cm), for approximately 35’ minutes.

Serve with a cup of tea or coffee!!

    I love dates(!) and always have almonds in the freezer.
    I do need a quick cake sometimes and then I have trouble finding a good recipe.

  2. It looks delicious. We don't see dates in Greek supermarkets often except during the Christmas period and then they are quite expensive so I don't buy them often.
