Sourdough bread made at home (natural yeast)

Natural yeast is a mixture of flour and water that captures wild yeast and lactic acid bacteria from the environment. This yeast mixture also called a " starter " or " levain " is used as the leavening agent in sourdough bread. Here's a basic step-by-step guide on how to make bread with natural yeast at home: Ingredients: 1 cup all-purpose or whole wheat flour (for the starter) 1/2 cup lukewarm water (chlorine-free) A kitchen scale A clean glass or plastic container with a lid A kitchen thermometer Additional flour and water for the bread dough Salt (for flavor) Day 1: Creating the Starter In a clean glass or plastic container, mix 1/2 cup of lukewarm water (around 80-85°F or 27-29°C) with 1/2 cup of all-purpose or whole wheat flour. New York Cheesecake with Homemade Cherry Sauce

If you like cheesecake and cherries you have to try this recipe.  
For years I was trying to find the perfect Cheesecake recipe but none seemed to taste right. Recently I came across a recipe from BBC GoodFood that really made the difference. 
The only change I made was to discard the sour cream, and instead of that to use homemade cherry sauce.

Homemade Cherry Sauce

Ingredients
500gr cherries, pitted
275gr caster sugar
1 tbsp glucose
2 tbsp freshly squeezed lemon juice
1 tbsp butter
2 tsp corn flour, dissolved in a little cold water 

Preparation Method
1) In a medium sauce pan add cherries, sugar, glucose and lemon juice. Bring to a boil a reduce head to medium. Continue cooking for 7 minutes. 
2) Add butter. Stir well. 
3) Then add corn flour and cook for another 2 minutes.
4) Allow to cool completely before using it.
