Taramosalata (Fish roe salad - meze)

Tasty Bites with Homemade Anari/Ricotta Cheese (Gluten Free)


In my previous post, I described how you can make cheese.  Well, in this one you can find a delicious, light snack, very easy to make and gluten-free!!

Although there is a list of ingredients in the recipe, the two main ingredients you need to have at home are Ricotta or Anari Cheese and eggs.  All the rests are herbs and spices.  You can omit the spices and herbs you don't like or add a few more...  Either way I am sure you will love every single bite of them!

Tasty Bites with Homemade Anari/Ricotta Cheese (Gluten Free)
Makes 26

Ingredients
630gr Homemade Anari or Ricotta Cheese
¼ tsp ground cumin
¼ tsp ground nutmeg
¼ tsp anise seeds
¼ tsp curry powder (mild)
¼ tsp fennel seeds
½ tsp sweet paprika
1 tsp dry thyme
1 tsp dry oregano
1 tsp ground mint
Salt
Pepper
2 medium eggs
½ cup sesame seeds

Preparation Method
1) In a large bowl mix all ingredients but the sesame seeds.

2) Form into balls and roll them in sesame seeds until well covered.

3) Cook in a preheated oven for 20’ minutes at 390ºF (200ºC), or until golden brown.

4) Allow cooling for 10’ minutes before you serve them.

    I haven't had the chance to make the cheese yet (we have a big holiday coming - Passover....) but once I make the cheese, the next thing will be these snacks.

  7. I just had a sesame-seed snack today, but it wasn't as good as this looks. I love the way you displayed the preparation method in pictures--and in such a compact way. I've been trying to perfect that technique but haven't mastered it yet. Big Kudos!
